I ordered the Radiant Cookbook after attending a talk by the author at a local wellness festival. I have been enjoying reading through this cookbook, as it is much more than just recipes. As someone who is learning how to make plant-based eating part of my lifestyle, I have found this book to be highly educational. There are chapters on ingredients, kitchen equipment, nutrients, and lifestyle tips. The book is well-organized by category, so it is easy to follow, and the end even includes a useful index of links to specific products for easier sourcing of ingredients or kitchen tools. While some of the recipes seem quite in depth, they are very approachable after attempting for the first time. I can't wait to start experimenting in the kitchen with so many ingredients that are new to me!

This is a beautiful cookbook - artfully laid out and with vibrant photography. The vibrancy of the photos is thanks to the fresh and alive ingredients used throughout the recipes, with a focus on raw foods. Delicious recipes along with easy-to-follow teachings about specific foods and their benefits. This book is for anyone who wants simple and delicious ways to use food as medicine.

To fully embrace the recipes included in this creative cookbook,you will need a dehydrator, Bragg's Amino Liquid & Nutritional yeast.These are items commonly used in vegan meals so if you are, you most likely have them.If you're not vegan (I'm vegetarian, cook for meat lovers, do not have above items) and this book still works.Of the few recipes I tried with what was in my house, instruction & measurements were clear, tasty and,easy to adapt to available ingredients & temperatures.*Some Quick Tips~If you don't have nutritional yeast, or don't know what it is, it's dried flakes that taste like cheese.Almost textured like shredded parmesan with nutritional benefits for a protein lacking diet.If you are not vegan, you can substitute actual cheese bc Nutritional yeast is not cheap.Also, I took a pass on the edible flowers as garnish.They are about $20 for a small package, don't last long & taste like flour.Any herb like basil, thyme, dill, even parsley, will work just fine if you must garnish.I added my own kitchen knowledge to adapt to my tastes.Such as Lasagna Primavera. This is a raw recipe that should sit overnight to marinate.I wanted a warmed, veggie packed lasagna so popped it in the oven at 325 for about 25 min.It was soooo good. Don't think cold would've worked for me or the meat lovers.My additional adjustments were, I used raw cashews instead of macadamia for the herb ricotta.I use raw cashews quite a bit so had them in the house.My fave artichoke dip uses them & blows away any recipe, even for meat lovers.The tomato marinara recipe seemed a bit odd with dates & honey but it worked.Also, the zucchini noodles I've made again on their own.So simple with lemon, oil & salt & really yummy.The Papaya Lime salad was a big hit in our house.Tasted like one we get from our fave Thai restaurant.Also did the mermaid bowl but added blueberries instead of blue green algae.*Spoiler~ it has coconut. Mmmm.While this is a book for non meat, raw food lovers that, is disguised to appeal to your vanity with beauty secret recipes.It's very well researched, written & a good stepping stone for piqued interest in this lifestyle.However, I'm going to be brutally honest, healthy is not easy.It's time consuming & requires commitment.It's much easier to drive through or pop dinner in a microwave than to chop veggies.Start on a weekened when you feel fresh & choose a large portion recipe you can cut off for weekday lunch.It can be done.If you're feeling run down, tired & old,think of the old adage," You are what you eat" and,take some baby steps to feel pretty inside..Maybe the pretty pictures in Ms Leite's book will inspire you.Good Luck

I have mixed feelings about this book. The first 50 pages are filled with good information about "radiant eating" and contain lots of info about various ingredients. The book is gorgeous with full-page photos facing the recipes. I have no doubt that the food is delicious. The ingredient lists are rather daunting, though, either in their uniqueness and/or cost. For example, a breakfast bowl called "Glow Bowl," which I am sure is delicious and healthy, contains lucuma powder, mesquite powder, maca powder, and reishi powder among its 12 ingredients. Plus two of the ingredients are other recipes from the book: 1 cup Spiced Cold Brew (a 6-ingredient recipe elsewhere in the book that contains dried rose petals) and 1/4 cup Tropical Matcha Granola (a 15-ingredient recipe). So as appetizing as the Glow Bowl--with its 31 ingredients--looks and sounds, that recipe is not happening at my house. I did see some recipes that sounded and looked good without sending me on an ingredient scavanger hunt : Mango and Avocado Ceviche--a 13-ingredient recipe. But realistically, I don't see myself utilizing this book very often, no matter how wonderful the results.
